Job Description

Overview

The Sous Chef at Olde Mecklenburg Brewery (OMB) will support the culinary team by providing leadership and ensuring the quality of food preparation and presentation meets the brewery's standards. The position is integral to the operations of the Brauhaus restaurant, catering, and events, working closely with the Executive Chef and managing staff to deliver an exceptional dining experience.

Key responsibilities

  • Provide professional leadership and direction to the culinary personnel.
  • Ensure recipes, food preparation, plating, and presentation meet quality standards.
  • Coach and perform performance evaluations for staff.
  • Conduct disciplinary actions when necessary.
  • Maintain a safe and sanitized kitchen environment.
  • Operate as an expeditor during peak times.
  • Collaborate with the Executive Chef on daily line-ups.
  • Participate in training programs and hiring processes for culinary team members.
  • Manage opening and closing procedures with the Service Team.
  • Ensure all stations are stocked and quality controlled.
  • Manage daily staffing levels throughout shifts.
  • Follow all company emergency and safety procedures.

Required skills

  • Culinary degree or 3 years of training in a high-volume establishment.
  • ServeSafe certification or willingness to acquire within 1 year.
  • Computer skills including Microsoft Word, Excel, and culinary reporting software.
  • Flexibility to work weekends and holidays.
  • Ability to lift up to 50 pounds.
  • Interest in craft beer.
  • Positive attitude and strong communication skills.
  • Strong leadership and organizational skills.
  • Excellent cooking and presentation skills.
  • Ability to remain composed during busy service periods.
