Overview

The Executive Pastry Chef at the University of Delaware is responsible for leading the pastry department, ensuring high-quality desserts and baked goods. This role focuses on creative direction, menu development, and team management while emphasizing culinary excellence and innovation.

Key responsibilities

  • Lead and train pastry staff on techniques and presentation standards
  • Develop and design new dessert recipes
  • Manage inventory of ingredients and supplies
  • Coordinate work schedules for pastry team members
  • Monitor food safety and sanitation practices
  • Maintain and manage food cost budgets for the pastry department
  • Collaborate with other kitchen staff to create menu offerings
  • Oversee presentation and quality control of pastry items
  • Provide pastry items for large-scale events and daily dining
  • Collaborate with the Resident District Chef for program innovation

Required skills

  • 5 to 10 years of experience in culinary field, particularly pastry arts
  • 3 to 5 years of management experience
  • Experience in project management for large-scale pastry operations
  • Associate's or bachelor's degree in pastry arts or culinary arts
  • Serv-Safe certification
  • Leadership capabilities and customer service experience
  • Ability to work with mixed nationalities and cultures
