Overview

Sodexo is seeking an Executive Chef for their operations at Eastern New Mexico University in Portales, New Mexico. The role involves overseeing food service operations, including resident dining, retail, catering, and concessions, while ensuring culinary standards and food safety compliance are met.

Key responsibilities

  • Oversee all aspects of food service operation at Eastern New Mexico University
  • Be responsible for purchasing, menu compliance, and inventory management
  • Conduct food cost analysis and food production forecasting
  • Ensure implementation of Sodexo Culinary standards including recipe compliance and food quality
  • Develop and motivate team members to embrace culinary innovations
  • Ensure compliance with food safety, sanitation, and workplace safety standards
  • Utilize automated food inventory, ordering, production, and management systems

Required skills

  • Strong culinary background
  • Experience in food or culinary services for at least 2 years
  • Excellent leadership and communication skills
