Overview

As a Culinary Standards Manager at Disney Cruise Line, you will be part of the shoreside culinary team responsible for developing and implementing menus and recipes across various dining areas on board. This role emphasizes achieving the highest culinary standards through effective leadership, collaboration, and continuous improvement.

Key responsibilities

  • Assist in the development of all menu content
  • Look for innovative ways to create and refresh products for guests
  • Collaborate with Disney Cruise Line Food and Beverage teams for open communication
  • Partner with food managers to maintain culinary excellence
  • Oversee Food and Beverage collateral from conception to delivery
  • Participate in succession planning and training for Culinary teams
  • Foster teamwork among shipboard and shore teams
  • Ensure timely completion of all audits and procedures
  • Act as coach and mentor to culinary teams
  • Lead audits and trainings requiring travel

Required skills

  • Minimum 5 years' experience in an Executive Sous Chef role or higher
  • Experience in menu development and implementation
  • Familiarity with a la carte, banqueting, and large volume operations
  • Flexibility with work schedule, including shipboard implementations and audits
  • Strong presentation and business planning skills
  • Conflict resolution and organizational skills
  • Computer proficiency in Windows/Mac environment
  • High level of cooking skills and culinary knowledge
  • Strong initiative and problem-solving skills
  • Willingness to travel domestically and internationally
