Overview

The Chef de Cuisine will lead the kitchen at a high-performing, family-owned Italian restaurant in Dallas, TX. This hands-on role requires a working chef who excels in a high-volume environment and focuses on maintaining discipline, consistency, and quality in the culinary operations. The position offers growth opportunities, with the potential to take on greater leadership roles or partnership in the future.

Key responsibilities

  • Lead all back-of-house operations with a hands-on approach
  • Work all stations during high-volume service (200-300 covers)
  • Ensure consistent execution of menu items to restaurant standards
  • Train, mentor, and develop line cooks and prep staff
  • Manage hiring, onboarding, scheduling, and performance management
  • Maintain strict standards for authentic Italian cuisine and food quality
  • Manage food cost, waste, and inventory levels
  • Control purchasing and vendor relationships
  • Ensure compliance with health, safety, and sanitation standards

Required skills

  • 5+ years in a leadership kitchen role (Sous Chef, Chef de Cuisine, or Executive Chef)
  • Experience in high-volume, upscale casual Italian restaurants
  • Strong foundation in authentic Italian cooking techniques
  • Ability to manage multiple stations and lead under pressure
  • Strong problem-solving and decision-making skills
  • High standards for cleanliness and organization
